There's a hummus among us


H ummus is one of those basic recipes that is so so handy to have in your repertoire. Whip up a little hummus with crackers and cheese, add some to a Greek salad or wrap, use it as a dip for veggies... the options are many.

Hummus is also one of those foods that I can remember eating for the first time (again with the food memories!), mostly because up until the very first bite I was resolutely convinced that chickpeas (garbanzos, as I was raised to call them) were the devil's food. Granted, I mostly ate them at church potlucks in traditional over-dressed-and-over-marinated three-bean salads. (Well, in true childhood eating fashion, I probably had them ONCE and made a judgment of Never Again.) But with that first bite, my mind was about to be blown...

Fastforward to 1991 and a girlfriend who loved to experiment with food. She was quite ingenious with a newlywed grocery budget--she knew how to turn random ingredients into a great meal. One of these meals regularly involved hummus. Imagine my surprise at how actually delicious it was; flavorful and unlike anything chickpea-ish I'd ever tasted before.

I go through hummus phases, where I make it a lot, then take a break... a few months later, I think, where's the hummus? and away we go again on a hummus jag. The past couple of weeks? Yeah, we're on a jag...

Hummus
Makes 2+ cups
1 16 oz can (2 cups if you've cooked your own) chickpeas or garbanzo beans
1/4+ cup liquid from can of chickpeas (or water, if not using canned)
3-5 Tbsp lemon juice (depending on your taste)
1 1/2 tablespoons tahini
2 cloves garlic, crushed (roasted garlic is great for flavor, and you can up the number to 3-4 cloves, since the flavor is more mellow)
1 tsp ground cumin
1/2 teaspoon salt
2 tablespoons olive oil

Put the garlic cloves in your food processor and whiz until they are chopped fine. Add the chickpeas, liquids, tahini, cumin, salt and olive oil, and puree until smooth. Taste and then adjust as you desire. (Here is where I often add another garlic clove, thinking it needs a little "boost," and then regret it later...)

For smoother hummus, legend has it (well, online sources, but it sounds like the work of a legend) that peeling the individual garbanzo bean is the way to go for truly creamy hummus. One day I may have just that much time on my hands. But I have a hard time actually thinking that the smooth would be worth it... who knows, maybe once I've done it, I'll never go back?

I DO know that letting hummus sit overnight in the fridge improves its flavor greatly, if you have that kind of patience. For me, I usually double the recipe and enjoy the first night, then have leftovers the second night and remark to myself how a) wonderful it is, I should always leave it to deepen the flavors, or b) wow, why did I add that third garlic clove?

And, lastly, there are always lovely variations to be had with hummus. I think one of my favorites is roasted red pepper, which is easily accomplished with  a few strips of either fresh or canned roasted red peppers hopping in the food processor along with the rest of the ingredients. And I always like a few chopped kalamata olives on top or mixed into the hummus as well (see picture above!).

Are you ready for some football?

Well, the game is in the second half and I could really use a nap, but if I don't post now, it won't happen. You know me. Out of sight, out of mind. Or, in tummy, out of mind! And while I'm not a huge football fan, the Super Bowl is a tradition, and there's food, right? At least, that's the way we roll around here. And from the look of all the food blogs this weekend, we're not alone. This is one big eatin' weekend in the U.S.

I think I cooked more today than in the three weeks prior, combined (which says something about how slack I've been in the kitchen lately). I'm tired like after Thanksgiving dinner, almost. But it was fun, and I got a chance to experiment with a bunch of new and different things, and a couple of tried-and-trues, too.

Here's what was on the Superbowl menu:

* Soft pretzel bites (for Seth). This was the biggest experiment for us, and well worth it. Very fun and easy to make, and yummy right out of the oven. I'm curious how they'll be tomorrow, as a lunch box addition for Seth. I'm sure he'll let me know!

I've never boiled something prior to baking before... It was pretty cool. Next up, bagels?

* Roasted chickpeas (for husband) and roasted edamame (for me).

* Jalapeno poppers (For the boys in general, though I got a little more into them than I thought... a bit of heat, but completely doable. And yummy.)

* Baked onion rings (have been making these for a while now. Love it!)

Both the onion rings and the zucchini sticks got eaten up before I thought of (remembered!) to take a photo. Alas. It was that kind of day. Food was going out of the kitchen like crazy.

* Salmon, grilled, for something healthy!

* Homemade tartar sauce (for the onion rings. I'm out of The IceBurg tartar and can't really take storebought anymore.)


Tartar sauce
1 cup mayonnaise
2 Tbsp. of lemon juice
1/2 cup dill pickle, minced
3/4 cup of white or yellow onion, minced
2 Tbsp. green onion, minced
1/2 tsp. Tabasco sauce
Salt and pepper to season

Mix all ingredients together and let sit, refrigerated, for an hour or so for the flavors to marry.

I was planning to add capers, but the jar I had on hand was a wee bit old, so I pitched it and decided to go caper-free. I looked around at a lot of different recipes and the variations are vast! We were happy with our mixture, though. It went well with the salmon, the onion rings, the zucchini sticks... well, everything!

If you watched the game, I hope you were pleased with the outcome? For me, it's all about the ads. Did you see the Google ad? I thought it was a new one but when I went to YouTube I discovered it was not. It's still sweet as can be. Since my dear friend Corinne has been working on her Paris plans all day (well, in between Superbowl ad times, from what I could tell from her Twitter and Facebook posts!), I thought I'd share this for her.

Chickpea salad


This one is an old favorite from way back when. Well, a favorite from maybe 5 or so years ago... that's way back when, right? Anyway, I used to make it for husband during the early romance days (ah, sweet), and he always gave me high praise for it. Shucks.

I'm surprised I haven't made it and posted about it before, but I just haven't made it in eons. I can't actually remember where the recipe came from. I think a girlfriend made something similar at a book club meeting years ago, and I tried to recreate from memory and this is what I came up with. I poked around epicurious for awhile (5 years ago that's where I turned 9 times out of 10 for a recipe) but didn't see anything too close, so I'm pretty sure I'm not ripping someone off here!
Chickpea salad
3 cups chickpeas, cooked
1 8 oz. can diced green chiles
1/2 cup green onions, chopped
2 roma tomatos, chopped
2 tsp. ground cumin
2 Tbsp. lime juice
1/3 cup mayonnaise (I use a light version, horrors!)
Salt to taste

Very complicated: Mix all the ingredients together in a bowl. I add them in the order I've listed, with mayo last. I stir in just enough to coat the other ingredients, so you can go a little lighter on the mayo if you like, adding as you go until you have the desired amount of creaminess.
Yummy and healthy(ish)!
